A Farm-Fresh Meal Delivered to my Door!

As you all know, I’ve recently had a baby!  She’s two weeks old, in fact.  And throughout the past two weeks, we’ve been very blessed to receive some wonderful food gifts from friends and family to help relieve the burden of food preparation while my body heals and we get accustomed to life as a family of four.  (I’m SO thankful… cooking takes up a huge part of my day normally!)

Well, today I wanted to tell you about one particular meal we were given this week.  This meal (and the giver) were so super awesome that I knew I must share!  {Note: This is not a paid advertisement, just something that I was very impressed by and wanted to pass along.}

Who was this super awesome meal-bringer, you might ask?  Well, it was actually two people… a husband and wife who have recently opened a medical practice called Hippocrates Health & Wellness here in my town!  I did not know them prior to this week… but they offered to bring me a meal and I gladly accepted!  Hippocrates is probably unlike any medical practice you’ve heard of before:  Amy (the wife) is a Board Certified Physician and Dietician, and Paul (the husband) is a farmer, an engineer, and a fabulous cook!  And their unique family clinic offers not only a full spectrum of medical services, but it integrates medical treatment with diet & nutrition services!

 


 

Amy and Paul have caught onto the secret that the rest of the medical community seems to be realizing at a much slower pace… that the foods we eat have a drastic impact on our health (and can even reverse or cure some of our worst diseases!)  The research in support of this is staggering.  Proper diet is truly one of the best medicines out there.

 


 

Among the nutrition services Hippocrates offers (including weight loss coaching, meal planning consults, & cooking lessons) they also run an all natural farm-to-table meal delivery service!  I was the beneficiary of just such a meal this week, and to say I was blown out of the water would be an understatement.

These, my friends, are Turkey & Quinoa Mini-Meatloaves with about fifty different vegetables packed in as well.  (Kale, carrots, peppers, broccoli, you name it!  I think I even detected a few walnuts in there… YUM.)  They were finger-licking amazing!

And THESE (buckle up!) are Rosemary Roasted Brussels Sprouts with Apples, Pistachios, and an Apple Cider Reduction.  Eye rolling bliss.  Seriously.  So divine.

And THIS is a silky Butternut Squash Soup, made with free-range chicken broth and a bevy of perfect spices.

I had a few minutes to chat with Paul when he brought the food over, and it was great to hear about his passion for growing, sourcing, and cooking the freshest, healthiest possible ingredients.  Plant-food-lover that I am, this meal was right up my alley… I couldn’t have been more impressed!  It was so healthy and simultaneously delicious, I was gushing like crazy to Chris between mouthfuls.  (I’ll also add that he was extremely impressed as well!  So you’re not just relying on one opinion from me and my wonky post-natal taste buds.)

Amy and Paul have three clinics in the Central Arkansas area, so I would highly recommend popping over to the H2MD website and perusing it a bit if you are interested in providing your family with the kind of functional and fully integrated health services that they offer.  (Or even if you just need some assistance getting healthy meals on the table each week.)  I know I am definitely intrigued!
