My Brother Has Excellent Taste in Birthday Food.

Special K Treats- The most addictive peanut butter and chocolate dessert out there!  Better than rice krispies. :)

I am uniquely blessed in that (currently) most of my close family members live within an hour of me.  Both of my siblings and their wonderful spouses, plus my adoring in-laws, all live in a neighboring town just one hour away!  And we even have a decent smattering of cousins that live right here in Little Rock with us too!  (Well, not with us.  But in the same town.  Which is awesome.)

I know this won’t be the case for much longer… but currently, it rocks.  And one of the reasons it rocks is because it means we get to have frequent celebratory meals together!

Then came Mother’s Day Dinner… which I was especially psyched about, since the dishes I served were so decidedly feminine and lovely.  (I really get excited about pretty food.)

Chris and I even got to share our recent Gender Reveal News at a family dinner with our closest loved ones a few months ago!  (And it was a SURPISE gender reveal… Nobody knew the cupcakes were anything special until they bit in.  That made it even better!)

And this week, the fun continued with my brother Harrison’s 26th birthday celebration!  Smart man that he is, he wanted a gigantic chicken pot pie for his special meal (which dagnabbit, I forgot to photograph!)  To go with it, he requested a big salad filled with berries, nuts, and feta… delish!  (Here’s my recipe for that.)

Finally found the recipe for "Special K Treats"- most addictive PB + chocolate dessert bar ever!

~

One might be tempted to gloss over these at first glance, as (admittedly) they look like your basic PB+Chocolate bar dessert.  But oh, that would be a big mistake.  They are CRAZY good, man!  Addictive, really.  I am glad Harrison chose them for this birthday this year, because I typically get so caught up in fancy-pants desserts like Green Tea Creme Brulee (or some other such nonsense) that I forget about the classics!  This recipe has been in our family for YEARS, and every time I eat one, I remember why they are so well-loved.

And better still – they only have 5 ingredients!  You can’t beat em… best to just give in to the bliss.

Thank you, Harrison, for so expertly selecting such a delicious menu tonight.  And thank you for being the peacemaking middle child, the comic relief, the ponderer of deep truths, the truth-speaker, and the all-around terrific fellow that you are.  We love you!

These 5-ingredient bars are a family classic, and for good reason. You simply can't beat the combination of rich chocolate atop a gooey, crispy, peanut butter layer. Serve with a tall glass of milk!

Serves:: 12
Ingredients:
  • 1 C. light corn syrup
  • 1½ C. peanut butter
  • 6 C. Special K cereal
  • 1 bag semi-sweet chocolate chips
  • ½ bag butterscotch chips
Directions:
  1. Melt corn syrup together with peanut butter in a large, microwave-safe bowl. Add 6 C. Special K cereal and stir to combine.
  2. Press into a 13x9" glass pan.
  3. In a medium, microwave-safe bowl, pre-melt the ½ bag of butterscotch chips for about 30 seconds. Then add in the bag of chocolate chips, stir to combine, and melt in the microwave on High in 20 second increments, stirring in between. When chocolate mixture is totally smooth, spread over peanut butter/cereal layer in pan.
  4. Chill in the fridge until ready to serve (at least 1 hour.)

    Among the many compliments (all of which I appreciate)… one of my favorite (and most shocking) is, “My brother has excellent taste…” I am often shamed for my lackluster taste buds!
